Recipe of Khlea
Khlea is primarily made from beef or lamb. These meats are cut into thin and long julian form in the form of ham, and then this meat mixture is prepared in a marinated sauce. The ingredients in this marinade are: cumin, garlic, coriander, and these three ingredients are thoroughly assimilated. In a large bowl, the meat is stacked one by one, then sauted one by one and the meat is marinated. The marinating process takes about one day. After one day, the meats are allowed to dry with sunlight and heat. Sometimes these meats are hung on the ropes and dried.
